SOFT PILLOWS
1. Mix baking
mix, baking powder, sugar and egg-replacer in a bowl. Mix in the oil and vinegar
until the mixture resembles bread crumbs. 2. Add the syrup a little at a
time to make a roll-able dough. 3. If it is too
stiff add more syrup. Let stand for 15 minutes. 4. Divide the dough into golf
size balls and roll them into thin tortillas. (do not use electric tortilla
press for this; use rolling pin) 5. Using a pizza cutter cut the
tortilla into strips and then diagonally also to make small 1-inch squares. 6. Heat oil to 375 deg F. (
deep fat fryer that maintains the temperature is the best for frying; or you can
use a candy or fat frying thermometer to check the temperature; you can also fry
without checking temperature as long as you don't burn the sopapillas) 7. Deep fry the small squares.
Fry 6-8 squares at a time since otherwise oil may bubble up and overflow. The
squares will puff up and look like pillows. Cook for a few minutes on each side
until golden brown. 8. Serve with any of these
toppings. 1. "mock
refried beans" (Combo burritos recipe in www.lowprotein.com
) topped with low-pro cheese, lettuce, tomatoes and salsa. 2. Boil 1 cup of water with 3
cups of brown sugar and 1/2 tsp powdered cinnamon until it gets thick like
pancake syrup. Serve it on top. 3. Mix 1/2 cup of powdered
sugar with 1/2 tsp powdered cinnamon and sprinkle on top of sopapillas while
still warm. 4. Just sprinkle with powdered
sugar while still warm. 5. Drizzle with plain honey or
flavored honey. (do not give honey to a child who is younger than 1-2 years
old). I made about 80-100 little squares for this amount of dough. NUTRITIONAL

This can be a great low-pro snack with various topping according to taste.
