LOW-PROTEIN  COOKING  WORKSHOP

In the last few years, I have conducted low-protein cooking workshops with the help of Kathryn Moseley, RD, Children's Hospital of Los Angeles. The venue for such workshops is California State University, Long Beach. The Family and Consumer Sciences department at the university has been kind enough to let us make use of the kitchen facilities for our workshop. 

Everyone of these workshops, conducted in six fully equipped kitchens, have been successful. During these workshops, PKU kids, teens, adults, and their families have participated and have had first hand experience in trying out the recipes that I have formulated.

WORKSHOP FORMAT:

The introduction is very short about what we will be making during the workshop. Everyone at the workshop will get a copy of the recipes to be prepared.

  1. The registrants will be divided into groups, each group being assigned to prepare a particular recipe.

  2. One table assigned as ingredients table, and one table assigned as display table for finished items.

  3. One person from each group will collect the ingredients for their recipe.

  4. The recipes will be prepared according to schedule.

  5. Except for the lunch items the rest of the items are displayed at the display table for later evaluation.

  6. Lunch

  7. After lunch other items are prepared. (Items are prepared depending on time)

  8. Everyone gets to sit at the evaluation table to taste and evaluate each and every single item prepared during the workshop.

  9. Group discussion on how the recipes turned out.

  10. Troubleshooting and tips.

  11. Clean up and go home.

Clean up will be done as and when the recipes are prepared, and so final clean up takes minimal time.
